Lindum is a washed rind cows milk cheese from Cote Hill Dairy in Lincolnshire, named after the old Roman name for the city of Lincoln. It has an elegant depth of flavour, a firm to semi-firm texture, and finishes slightly earthy and smooth.

Regular washing in local Tom Wood's Bomber County beer gives the cheese its natural pink rind, which develops a pungency as it matures and feeds extra flavour back into the paste.

Michael and Mary Davenport have farmed at Cote Hill Farm, Osgodby, in the heart of the Lincolnshire Wolds for over thirty years. Lindum is hand-made on the farm by Michael and Mary with their sons Joe and Ross, using milk from their eighty pedigree Friesian cows.

A whole Lindum weighs approximately 1.6kg.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

A robust chutney holds up against the washed rind. Naturally enough, a pint of local ale is the drink to reach for.

Washed in Lincolnshire beer, made in the Lincolnshire Wolds. About as local as a cheese gets for us.

How should I store my cheese once it arrives?

Cheese is best kept in the fridge wrapped in the waxed paper or packaging it arrives in. Avoid plastic wrap, as cheese needs to breathe.

How long will my cheese last?

Most cheeses will last 1-2 weeks if stored properly. Harder cheeses tend to last longer than soft cheeses.

Do you deliver nationwide?

Yes, we deliver throughout the UK mainland. Some remote areas may have longer delivery times.

When will my cheese order arrive?

Orders placed before 12pm are dispatched the same day for next-day delivery. We deliver Tuesday to Friday.

Is your cheese pasteurised?

We stock both pasteurised and unpasteurised cheeses. Each product page clearly states whether the cheese is pasteurised.

Do you offer subscriptions or cheese boxes?
