Description
A superb unpasteurised blue made in Lincolnshire, similar in style to a soft textured blue brie. Creamy with a definite sharpness and rich, complex flavours, encased in a thin grey rind.
Cote Hill Blue is hand-made on the farm by Michael and Mary Davenport and their sons Joe and Ross, using milk from their eighty pedigree Friesian cows. The family have farmed at Cote Hill Farm, Osgodby, in the heart of the Lincolnshire Wolds for over thirty years.
The milk goes straight from the cows to the cheese-making rooms on the farm without pasteurisation. The result is a fine balance between rich creaminess and a peppery bite, maturing from a lightly chalky centre to a soft, runny texture. The moulds on the natural rind do a great deal of the flavour work. One of the best examples of Lincolnshire produce available.
How much to buy
A whole Cote Hill Blue weighs approximately 1.2kg.
All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Recipe / pairing suggestion
Suggestion – WALNUT, HONEY & OLIVE OIL CRACKERS
A walnut and honey cracker is the right vehicle, sweet enough to balance the peppery bite. Let the cheese come up to room temperature or you will miss half of it.
Made on the farm, unpasteurised, five miles up the road. We are slightly biased about this one.
