The tasting profile varies according to the soil, climate and flora – in this case the cattle graze on lush pines on the mountain slopes. Recognisable by its beige rind and small intermittent holes, Comte AOC is hand-made to a 1000 year old recipe. During the aging process, each whole cheese has to be turned weekly and rubbed with brine to create a perfect, fine, smooth cheese. A versatile cheese, good for the board, for fondue melting and in general cooking. Also known as Gruyere de Comte or Compte.
