Gubbeen
The flavours are creamy with notes of wild mushrooms and toasted almonds that vary depending on the maturity of the cheese.
Fermier Bleu d'Auvergne
Its creamy, soft texture has a strong flavour with a woodsy fragrance, reminiscent of mushrooms. The moist, spreadable and crumbly texture literally melts in the mouth.
Culpeper
Culpeper named after the 17th century English Botanist, herbalist, physician and astrologer Nicholas Culpeper. It's a small round Jersey milk cheese, rolled in English herbs and mould-ripened (geotrichum). It has a fresh, creamy herby taste while young, and gathers interesting depths of flavour as it ages.
Pairing suggestion - Fourseed Sourdough Crackers
Each cheese weighs approx 150g.
Appenzel
The flavours of the cheese are floral and nutty with herbal aromas with a firm, smooth and buttery texture.
Dazel Ash
Dazel Ash - The name of this beautiful springtime cheese is derived from an idyllic little copse 'Dazel Wood' situated just behind the farm in the New Forest. This delightful goat's cheese has an edible ash coating which matures into a crinkly rind which takes on a lustrous satiny, dark hue of black and white. The cheese has fresh, clean flavours which pair perfectly with lemon curd, wildflower honey or frozen grapes.
Pairing suggestion - Lemon Cheese Preserve
Each cheese weighs approx 200g
