This is is a wonderful, varied selection of cheeses that both sell incredibly well online and in our Lincoln cheese shop. Four delicious favourites each with big characters and full flavours. A rich, crunchy mature cheese with Vintage Red Fox, a decadent triple-cream delight with Delice de Bourgogne, medium strength, smooth and mellow Blue Monday and the fresh, crumbly, lactic Kit Calvert Wensleydale. We’ve paired these with the crowd-pleasing Sourdough crackers, Perello pickle mix and Hawkshead Chilli Jam.

Vintage Red Fox
Weight: approx 200g.
Vintage Red Fox is a Red Leicester style cheese with a distinct crunch. It has a smooth, sweet, mellow flavour and a flaky, open texture. Like other red cheeses, Red Fox gets its colour from the flavourless dye from the South American plant Annatto.

Blue Monday
Weight: approx 200g.
This is a rich, pasteurised, blue cow's milk cheese created by Alex James, a former band member of Blur, turned cheesemaker. Faintly sweet, intensely savoury, spicy, and a rich, complex flavour. The cheese has bold cracks and blue streaks with a thin natural rind.

Delice de Bourgogne
Weight: approx 200g.
A decadent triple-cream cheese. Rich and full-flavoured with a smooth, velvety, melt-in-the-mouth texture. Delice de Bourgogne is made by adding crème fraiche to full fat cows milk. It has a white, bloomy rind which has a mushroomy smell that contrasts nicely with the buttery and tangy notes of the cheese.

Kit Calvert Wensleydale
Weight: approx 200g.
Kit Calvert Wensleydale is a handcrafted buttery, textured Dales cheese made with natural rennet. This well-known, delicious cheese is creamy-white in colour has a supple, crumbly, moist and flaky texture. It appears similar to a young Caerphilly. The flavour is mild, clean, and slightly sweet with hints of wild honey savour and fresh acidity.

Fourseed Sourdough Crackers
Weight: approx 100g.
Fourseed Sourdough Crackers are unique crackers made by a local bakery. Made from the starter used for their fresh sourdough loaves, creating toasty, crunchy, robust crackers. The result is deliciously moreish with a nutty flavour and the addition of toasted seeds. These are perfect with most cheeses and ideal for dipping in softer cheeses like Delice de Bourgogne or baked Tunworth.
