Known as one of Wales’ best loved soft cheeses this is a unique cross between a traditional Brie and a Caerffili. The makers of this cheese, Caws Cenarth, use the Caerffili recipe as a starting point which creates the soft texture and a fresh citrus flavour with hints of sea salt. Developed by Cawyn Adams on the Carmarthenshire family farm, the family have been making cheese for six generations.

Wales is well-known for its rain – all that rain keeps their pastures green and healthy, which leads to happy, well-fed cows (plus sheep and goats) and top-quality milk.

Despite their perfect dairy farming conditions, Welsh cheese is underrated. It’s so much more than bland, mass-produced Caerphilly and cheese on toast. From creamy soft cheeses that would rival any French brie, to punchy Cheddars and lip-smacking blues, Welsh cheesemakers are pushing boundaries with their innovative recipes and flavours while preserving traditional techniques.
