The development of this new cheese began in 2010 and subsequently went on to win Supreme Champion at the World Cheese Awards in 2017. Firm in texture with a gentle flaky middle, the flavour is buttery with notes of caramel and butterscotch, a truly unmissable cheese. Hand made by Lynher Dairy in Cornwall best known for producing the nettle-wrapped Cornish Yarg. Cornish Kern was inspired bu a Gouda recipe, using Alpine starter cultures to create a close, semi-firm textured cheese. Usually matured for around 16 months.
