Baked Tunworth topped with a Pear, Apple and Sultana Slaw
Ingredients:
-
1 British apple (I used Jazz)
-
1 Pear (these were Forelle)
-
A handful of sultanas
For the slaw dressing:
-
glug of extra virgin olive oil (Onsuri Olive Oil)
-
a teaspoon of Dijon mustard
-
2 teaspoons mayonnaise
-
Salt and freshly ground black pepper, to taste
Method
-
Prepare the fruit:
Thinly slice the apple and pear into long thin sticks. -
Make the dressing:
In a jar, mix together all the dressing ingredients and shake well. -
Mix:
Put all the fruits together in a bowl and pour over the dressing, mix so that everything is coated. Ideally like it sit 10 minutes or so to marinade in, but not too long that the apple starts to brown. - Bake your cheese: Open your Tunworth and score the top of the cheese, bake in the oven or air fryer for 5-10 minutes, until runny and bubbling. Either top your cheese with the slaw or serve on the side. This fresh slaw really cuts through the richness of the cheese. A summertime delight.
