Taleggio is a fine Italian cheese named after caves Val Taleggio near a small town in the Lombardy region of Northern Italy. Soft, supple and buttery with a lactic flavour, the perfect summer cheese. The washed and smear ripened rind develops a soft pinky grey hue, which contains a meltingly characterful cheese. The cheese is washed with a seawater sponge to prevent mould growth and to get its distinctive colour.
The rind is imprinted with the four-leaf brand to identify its origins. Traditionally served after a meal with a selection of fruits, we like it with fresh apricots and strawberries – or in various dishes during a meal as it melts well.
This cheese was featured on the BBC Food & Drink programme where Angela Hartnett used it as a pizza topping instead of the more traditional Mozzarella. Try making individual tarts with butter cooked, crisp apple wedges in the bottom of a pre-baked pastry case and topped with slices of Taleggio PDO, finish either under the grill or in the oven for a lovely lunch or supper dish with some fresh salad leaves.
Please note all cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can!
A whole cheese weighs approx 2kg
