Mike Thomson has created a new raw milk blue cheese that is hand made in Newtownards in Northern Ireland from the milk of a single herd. He has been supported by friends and backed by 98 investors, he is now supplying Northern Ireland with its first raw milk cheese. He graduated from the Artisan School of Cheesemaking and has honed his skills with some highly respected cheesemakers before setting up his own business. The recipe is loosely based on a blue Stilton, and aged for around 12 weeks.
The flavour is creamy and memorable, with the taste of the Irish pastures on the finish.
