Venaco is a washed-rind, ewe’s milk cheese produced in the mountainous regions of Haute Corsica. The name ‘Venaco’ is derived from the name of the village at the centre of the island, famous for its annual cheese faire which takes place in the first week of May, allowing local exhibitors to showcase the islands diverse array of cheeses.
Venaco has a strong scent, a complex flavour, and a melt-in-the-mouth texture. The red-orange rind, created by dipping the cheese in brine and maturing in a moist cellar, contrasts the ivory pate of the interior. Topped with a bracken leaf, Vecano makes a beautiful addition to any spread of cheeses. A more mature Vecano may also be grated over pasta or soup.
