St James Talegio is made by MARTIN GOTT on their unique farm, in Cumbria who has a strong belief in proper farming methods, ensuring his sheet have the best quality of life possible. St James is their signature cheese made from the seasonal milk from their herd of happy Lacaune ewes from early spring to late autumn. This is a brine washed-rind cheese, shaped into square moulds and washed turned three times a week. This process creates a thick, grey-yellow rind that adds an earthy and delicate flavour profile. The unctuous paste of the cheese is semi-firm and gradually develops a liquid texture around the rind. The flavours are milky and sweet with rich, savoury notes.

Martin has spent most of his life in the food industry. From an early age he would go to markets with his father and passionately sell the products. It was the the cheese that really grabbed is attention and he set off on a mission to create amazing cheese. He began by working with acclaimed cheese makers such as Mary Holbrook and Graham Kirkham of Mrs Kirkham’s Lancashire. Confident that he had the tools to succeed, along with partner Nicola, he set up at Holker Farm in the Lake District and began to produce something unique to the UK: a washed-rind ewe’s milk cheese. Inspired by the late James Aldridge, Martin decided to call his Talegio cheese St James.
