An unpasteurised, handmade farmhouse Red Leicester cheese – the only Red Leicester to actually be made in Leicestershire. Clothbound and matured for 6 months to give a rich, full, caramel flavour with an open flaky texture. Carefully hand-made by David and Jo Clarke, a couple of incredibly passionate dairy farmers whose families have farmed in the area for generations. They run one of the country’s top herds of 150 pedigree Holstein-Friesian cattle that feed on the farm’s lush pastures.
