(Pronounced Sin-uh-din) This individual goats cheese has a light, fresh character with a smooth, mousse-like texture and a delicate flavour of yoghurt, citrus and almond notes. The makers of this cheese, Fraser Norton & Rachel Yarrow have a herd of around 80 Anglo Nubian Goats (the Jersey Cow of the goat world). Fraser and Rachel were focused on making a goats cheese that showcased the floral richness and real quality of the milk used.
