A rare, firm textured, unpasteurised cheese from the Berne Valley in Switzerland. The milk is obtained from the Simmentaler breed of cattle, typical in this area and the cheese is naturally rinded and matured for around 12 months. It has an exceptional depth of rich nutty flavours with hints of crunchy salt crystals throughout the cheese.
