Roquefort Papillon is a naturally rinded unique ewes milk blue cheese which is simultaneously creamy and crumbly, with a definite salty tang. Reported to have been created 2000 years ago, its taste is mild, sweet and tangy at the beginning and then powerful and salty at the end. The cheese is reported to have been a favourite of Emperor Charlemagne. It is known as ‘The cheese of Kings and Popes’ in France.
Authentic Roqueforts are made in Corsica but they all undergo final aging in the limestone caves of Roquefort near Toulouse in southern France. The rind is open and porous which promotes the growth of the Pencillium Roqueforti (which was actually named after the cheese) whilst the cheese matures.
This cheese has a natural affinity with crisp salad leaves and crunchy walnuts. Roquefort’s salty tang makes dessert wines a good match.
