Made from an artisan recipe, this little cheese is made from raw milk freshly collected from a nearby farm. Once moulded, the Petit Pave du Gois is washed in brine and turned regulary, after which its pale yellow pate becomes airy and meltingly soft. The cheese is then matured in a stone cellar to intensify the flavours. The ‘Gois’ in the name refers to a path connecting mainland France to Noirmoutier Island which can only be accesses at low tide but when the seas change, people have known to get stuck!
