Perl Wen Organic Brie is known as one of Wales’ best loved soft cheeses this is a unique cross between a traditional Brie and a Caerffili. The makers of this cheese, Caws Cenarth, use the Caerffili recipe as a starting point which creates the soft texture and a fresh citrus flavour with hints of sea salt. Developed by Cawyn Adams on the Carmarthenshire family farm, the family have been making cheese for six generations.
Wales is well-known for its rain – all that rain keeps their pastures green and healthy, which leads to happy, well-fed cows (plus sheep and goats) and top-quality milk.
Despite their perfect dairy farming conditions, Welsh cheese is underrated. It’s so much more than bland, mass-produced Caerphilly and cheese on toast. From creamy soft cheeses that would rival any French brie, to punchy Cheddars and lip-smacking blues, Welsh cheesemakers are pushing boundaries with their innovative recipes and flavours while preserving traditional techniques. Here at The Welsh Cheese Company, we’ve made it our mission to spread the word.
Serving Suggestion – bake in an oven-proof dish until runny and gooey and top with dried apricots, fresh thyme and a drizzle of honey. Dip away with crusty bread, sourdough crackers and Spanish olives for a delicious dinner.
