This pyramid shaped, soft Ewe’s milk cheese is lactic in style and coated in charcoal (said to aid digestion). It has a very creamy and slightly citrus flavour with a smooth texture that gets velvety towards the rind. The appearance of the rind will develop with maturity from wrinkled silvery grey when young to a thicker, more natural coloured tone when mature.
The cheese has been named Pavé Cobble by the cheesemaker Roger, a keen cyclist, as a homage to the difficult and famous cobbled cycling stages.
