Made by Julianna Sedli at The Old Cheese Room on the Neston Park Estate in Corsham-Wiltshire. Julianna is known for her goats cheeses and wanted to explore a goats cheese style made from her Jersey cows milk. So here is Lypiatt made from organic Jersey cows milk, with a charcoaled coating (said to aid digestion) and matured for at least 2 and a half weeks. The maturation results in a wrinkly rind and its creamy texture, which must be the result of the delicious milk. Julianna puts a lot of love and care into making her cheeses and this cheese really reflects that, decadent, unique and creamy, a cheeseboard must have and a cheese relatively new on the cheese scene. Enjoy with pistachios and fresh raspberries.
