Lincoln Blue is an exceptionally creamy, mature blue cheese, which is coated in a pale yellow wax to retain moisture. Medium in strength, with a reasonable bite to the finish. A locally made, very high quality cheese, made in a similar way to stilton, using the Roqueforti mould that adds those beautiful blue veins. This is a moist and smooth, almost spreadable blue cheese that is delicious spread over herby foccacia with cured meats and caper berries. A cheese you’ll find yourself grazing on continuously.
