Made from raw milk exculsively by Tarentaise, Abondance and Montbeliarde cattle by the twenty seven strong co-operative D’Entremont-le-Vieux, which started in 1935 at the foot of Mont Grainer, who strive for quality and sustainability, preserving natural resources and helping maintain the formidably diverse local terroir. With a thin natural, pale brown rind, the cheese is regularly brusjhed during maturation. The paste beneath the rind is pale yellow, with a muilitude of tiny openings throughout. Its delicate flavours are fresh and fruity, like all good milk from Savoie.
