Graceburn Chipotle & Lemon is handmade by Dave and Tim at Blackwood’s Cheese Co in London, which they founded in 2013. The cheese is based on a Persian Feta recipe that Dave learnt whilst in Australia. It is a marinated soft cow’s milk cheese, much creamier than a traditional Greek Feta and comes steeped in a blend of extra virgin olive oil and rapeseed oil rather than brine. Garlic, Thyme, Bay and Pepper are added to the oil to give the cheese a rich herby flavour.
Graceburn is made using only the freshest milk which is collected whilst still warm, as the cows are being milked. This twist to the Graceburn original has an added zing of chipotle and lemon to create a unique flavour and freshness.
Use the oil to make a distinctive salad dressing. Blackwood’s pride themselves on making cheeses that are made by hand using as little intervention as possible. Graceburn is sensational spread over crusty sourdough, topped with fresh figs or grilled courgette or served crumbled in a salad with chunks of cool refreshing watermelon.
