This is a triple cream cows milk cheese made from whole milk with the addition of cream. The cheeses are ripened for for 2-3 weeks and have a soft white mould. It has a fresh, lactic nearly lemony flavour when young and develops a richer, more mushroomy flavour as it matures. The milk for this cheese comes from New Zealand Friesians’ along with a bit of Jersey milk giving it that intense richness.
