Elmhirst is a delicate, triple cream Jersey cows milk cheese with a light, mousse texture. The cheese is mould-ripened similar to a French Vignotte or Brillat Savarin. The texture is noticeably light and silky with a pure white bloomy rind. As the cheese matures it develops into a soft, luxuriously rich, full-flavoured cheese that can literally be spread over crusty bread and crackers. Made on the Sharpham Estate in Totnes, Devon who are known for their wine making. A modern vineyard established after the demise of all commercial vineyards during World War II and has been at the heart of the industry for nearly 40 years.
The cheese is named after the family that contributed so much to the area, Elmhirst is pure dairy decadence. Made using double cream which is added to their Jersey milk making a satisfying creamy, almost spreadable cheese that is delicious on crusty bread and delicious paired with fresh apricots.
