This small and perfectly formed Tomme has a minimum of 8 weeks maturation. Hand made at a small cooperative based in the Auvergne region of France, who only work with farms based within a 1000 meter radius of the dairy and who must adhere to the practice of putting cattle on the ‘Haut Herbage’. This means that during the summer the herb grazes in the alpine meadows and during the winter months the cows are fed with the alpine hay nothing being brought in from outside sources.
