With around 450 Lacaune dairy sheep on their farm in Lanarkshire, the Errington’s make exceptional cheese. They began making cheese in 1983 on a small scale and have grown considerably in the intervening years. Corra Linn was created in 2008 and is a firm textured, flavoursome ewes milk cheese. The result is a magnificent dense cheese with sweet and nutty flavours. The rind is rubbed regularly with locally grown rapeseed oil and wrapped in cloth, the cheese is then aged for up to a year and has an intense depth of flavour that lingers on the palate. Incredible with honey.
