Pack includes

Stichelton
Weight: approx 200g.
Stichelton is an English blue cheese made by Joe Schneider using organic, unpasteurised Friesian-Holstein cow's milk on his Collingthwaite Farm in Nottinghamshire. It is made to a traditional Blue Stilton recipe, except that it uses raw milk and natural rennet.  Pairing Suggestion - baked fig ball

Cornish Yarg
Weight: approx 200g.
Alan Gray (who gave Yarg its now famous name by reversing the spelling of his own) and his wife found a recipe from 1615 for a nettle wrapped semi firm cheese in their attic. The cheese is light textured with fresh citrus notes. The cheeses are carefully wrapped in nettle leaves, giving a distinctive finish and subtle herbaceous flavour. Pairing Suggestion - Stockans Thick Oatcakes A whole Cornish Yarg weighs approx. 3kg – if you would like a full wheel please contact us and we can arrange this for you.

Gorwydd Caerphilly
Weight: approx 200g.
Gorwydd Caerphilly is made following a traditional recipe and working the curds by hand, the cheeses are usually matured for a minimum of three to four months (which is longer than most caerphillys') to give a wonderfully deep flavour that is yet still fresh and clean tasting with slight citrus notes, combined with a surprisingly creamy, moist texture. This excellent cheese has deservedly won a number of prestigious cheese awards. Pairing Suggestion - PERELLO PICKLE MIX A whole cheese weighs approx 4kg, if you would like a whole wheel please contact us and we can arrange this for you.

Isle of Mull
Weight: approx 200g.
A hard pressed, full flavoured, powerful and spicy Scottish cheddar named after the island it was made on. A classic cheese for your Burn's Night celebrations.  Pairing suggestion – DRIVERS MINI PICKLED ONIONS

Baron Bigod Brie
Weight: approx 200g.
Baron Bigod is an exquisite Suffolk made, bloomy, pasteurised cows milk cheese in the style of a classic Brie-de-meaux. A full-flavoured soft cheese with a nutty, mushroomy rind. The smooth, silky golden paste will often ooze out over a delicate, fresh and citrussy centre. You will find long-lasting flavours of warm earth, farmyard and mushrooms, with occasional notes of citrus and truffle. Pairing Suggestion - Hawkshead Chilli Jam A whole Baron weighs approx 3kg - if you would like a full wheel please contact us and we can arrange this for you.

Local Fourseed Sourdough Crackers
Weight: approx 100g.
Fourseed Sourdough Crackers are unique crackers made by a local bakery. Made from the starter used for their fresh sourdough loaves, creating toasty, crunchy, robust crackers. The result is deliciously moreish with a nutty flavour and the addition of toasted seeds. These are perfect with most cheeses and ideal for dipping in softer cheeses like Delice de Bourgogne or baked Tunworth. Pairing Suggestion - soft cheeses Each bag weighs approx. 100g.

Baked Fig Ball
Weight: approx 110g.
The sweet, sticky fig paste is delicious with sharp, zesty cheeses such as a good Parmesan or Pecorino. The Seggiano Fig Ball comes from Cosenza, Calabria, in southern Italy. It is a delicious and traditionally ingenious way of preserving the juicy dottato variety of figs, which have tender skins, soft seeds and are unique to the region. The figs are pickled when plump and air-dried under nets before cooking for eighteen hours at a very low temperature. By this time they are sticky with caramelised fig juices. Pairing Suggestion - strong blue cheeses like Bleu des Causses Each fig ball weighs approx. 200g.
