Buche de Chevre is a supple goats cheese with a thin, slightly creased natural rind. The cheese beneath, ivory in colour is firm and smooth. Buche de Chevre has flavours that are delicate and savoury, with hints of citrus. Frank Redien and his team produce a wide range of artisan goats cheeses at Fontenille-Saint Martin d’Entraigues, between Poitiers and Saintes, only a few kilometres from the picturesque village of Chef-Boutonne. The region is well known for its excellent goats cheeses, which have been made on this land for centuries. The Foutenille Dairy collects milk from fifteen local farms, all in a 20km radius.
