A firm, summery cheese, rich and nutty with clear flavours of fresh milk and flowers, typical of the Tarentaise high mountain pastures. Well aged with a deep hazelnut flavour that is incomparable to any other cheese. Intensely fruity yet savoury and reminiscent of butter, cream and hay. Beaufort is made with the milk of Tarine and Abondance cows that graze on the pollution-free Alpine pastures studded with aromatic flowers and named after the small market town of its origin. This particular Beaufort we are currently have in stock is aged for at least 18 months to give an exceptionally intense flavour and finish. One of the world’s great cheeses.
