Ardi Gasna, which means sheep’s cheese in Basque, is a French cheese found in the Nive valley of the Pyrenees Mountains. Ardi Gasna is an unpasteurised, hard, ewes milk cheese that is matured for 4-6 months. The cheese is available throughout the year, but is at its best during the spring and summer when the flavour of the milk is more pronounced.
Ardi Gasna has a clean, fresh flavour with a hint of the mountain flowers which comes from the grazing pastures of the sheep. The cheese has a defined nutty taste that is characteristic of mountain sheep cheeses. As the cheese matures the flavours strike a balance between mildness and sharpness.
