Alpage was made in the springtime of 2020 from cows that are outside in the meadow all day long. What is special about this time is the richness and diversity of the grasses and herbs. There is no better time of the year to make cheese than this, as milk is richer and more flavoursome. After two years of maturing this 2020 vintage is ready and incredibly good. Spicy and grassy, with the traditional nutty flavours in the background.
