Truckles are whole cheeses - these can be full sized or babies of around 1.8kg or 600g. The "babies" make terrific gifts. To serve a Truckle, slice the top off and retain to use as a "lid", then cut around the cheese in small wedges to serve everyone. When you have had enough, simply pop the "lid" back on the truckle and wrap in a clean damp tea-towel and store in the fridge or a very cold larder. Bring to room temperature before eating to fully enjoy the cheese.
