Lincoln Blue

An exceptionally creamy, mature blue cheese, coated in a pale yellow wax to retain moisture. Medium in strength, with a reasonable bite to the finish. A locally made, very high quality cheese - excellent for presents or on your own cheeseboard. Made in a similar way to stilton, using the roqueforti mould that adds those beautiful blue veins.
